Wild Blueberry Banana Bread Muffins
- 3 bananas (ripe is best)
- 1/4 cup maple syrup
- 1/4 cup sugar
- 1 tsp vanilla extract
- 1/2 cup milk of choice
- 2 cups flour
- 1/2 tsp salt
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 cup Wyman’s Wild Blueberries
- Chopped nuts as topper (optional)
Preheat the oven to 350F and line muffin tin. Mash bananas with a fork and mix in the wet ingredients – milk, maple syrup, sugar and vanilla extract. In another bowl, combine and mix the dry ingredients – flour, salt, baking powder and baking soda.
Add the wet ingredients to the dry ingredients, fold together and then stir-in the thawed wild blueberries very gently (another option is to simply top the uncooked muffins with wild blues!)
Pour the batter evenly into the muffin cups and bake in the oven for 35-40 minutes or until middle is cooked through. Remove from the oven and let cool before serving.
