Spicy Mango Soup

Ingredients:

  • 1 cup full fat coconut milk
  • 1 cup (140g) Wyman’s Frozen Mango
  • 1/2 cup (75g) chopped orange bell pepper
  • 2 cups (200g) chopped cauliflower
  • 1 clove garlic, minced
  • 1 tsp paprika
  • 1/2 tsp jerk seasoning
  • 1/2 tsp salt
  • 1/4 tsp cumin
  • Cilantro to garnish

Directions:

  • Add cauliflower, bell pepper and garlic to a pan over medium heat with 2 tbsp water, steam for 10 minutes or until water is evaporated
  • Remove pan from heat and allow to cool
  • Blend mango, coconut milk and spices until smooth
  • Add the cooled cauliflower to the blend and blend until smooth
  • Heat over a stove until warm – or enjoy as a cool, refreshing soup
  • Serve with a toasted piece of sourdough and a bit of cilantro!
