No-Churn Blueberry Cheesecake Soft Serve

Recipe by Charlotte Martin, MS, RDN, CSOWM, CPT for Wyman’s

Ingredients:

  • 3 large bananas, sliced and frozen
  • 1 cup Wyman’s frozen wild blueberries
  • Heaping ¼ cup dairy-free or regular cream cheese
  • 1 Tbsp lemon juice
  • ½ Tbsp vanilla

Directions:

1.       Combine all ingredients in a food processor and blend until smooth. You may need to stop and scrape the sides with a rubber spatula several times. If too thick, add a splash of milk (nut, oat, coconut, or regular)

2.       Texture will be very soft. You can serve immediately, or pour into a parchment-lined bread pan, cover, and freeze until firm to your liking.
