Mango Berry Pancakes

Ingredients:

  • 1 cup Wyman’s Mango Berry, thawed
  • 1 1⁄2 cups (148g) flour
  • 2 tsp baking powder
  • 1 tsp salt
  • 1 tbsp sugar
  • 1 1⁄4 cups (282g) regular milk or buttermilk
  • 1 egg
  • 2 tbsp butter, melted
  • (optional) whipped cream, or butter and syrup for serving

 

Directions:

Preheat a pan over medium heat, or a griddle to 325°F.

In a large bowl whisk the flour, baking powder, salt, and sugar. In a medium bowl whisk the milk and egg together. Drizzle the melted butter into the milk/egg mixture, whisking as you drizzle.

Add the liquid ingredients to the dry ingredients, whisking till just combined (some lumps are ok). Lightly mash (to your preference) the thawed Wyman’s Mango Berry fruit and fold into the batter.

Spoon ~1⁄4 cup portions of batter onto the hot pan/griddle, cooking until edges are just set, flip, and finish cooking on the other side. Serve while hot with pancake toppings of your choice!
