Arugula Salad with Wild Blueberries and Greek Yogurt Dressing

This simple side salad is a delicious way to support a healthy immune system, thanks to the antioxidant-rich wild blueberries, which also provide fiber to promote good digestion, another important factor in immune system function. The yogurt dressing also adds a little dose of gut-friendly probiotic bacteria. Make it a meal by adding your favorite protein.

Serves 4

Ingredients:

  • 6 cups Arugula
  • 1 cup Wyman’s Frozen Wild Blueberries, thawed
  • 1 medium cucumber, sliced into small half-moons
  • ½ cup goat cheese
  • ¼ cup plain whole milk Greek yogurt
  • 2 tablespoons white or apple cider vinegar
  • 1 tablespoon water
  • Dash of salt
  • Dash of pepper
  • ½ teaspoon garlic powder

Directions:

Combine arugula, blueberries, cucumber, and goat cheese in a large mixing bowl.

In a small bowl, make the dressing by whisking together the yogurt, vinegar, water, and spice.

Pour the dressing over the salad and toss well to coat.

Serve immediately.
