Triple Berry Crumble Bars

Ingredients:

For the Crumble Layer:

  • 1 cup all-purpose flour
  • 1 cup old fashioned oats
  • ⅓ cup brown sugar
  • 1 tsp ground cinnamon
  • ½ tsp sea salt
  • 1 tsp vanilla extract
  • ½ tsp baking powder
  • 1 cup butter (½ cubed, ½ melted)

For the Berry Layer:

Directions:

  1. Preheat oven to 375 F.
  2. In a large bowl, add the flour, oats, brown sugar, cinnamon, sea salt, vanilla extract, and baking powder and whisk together. 
  3. Melt ½ cup of butter and cut the other ½ into cubes. 
  4. Mix all of the butter into the crumble mixture until combined and small crumbs form. 
  5. Press half of the mixture into the bottom of an 8x8 baking pan lined with parchment paper or cooking spray and set aside.
  6. In a pan over medium heat add the frozen berries, lemon juice, cornstarch, and date/maple syrup.
  7.  Lower the heat and keep stirring until the mixture has thickened (~3-5 minutes).
  8. Once the berry mixture has cooled, pour over the first crumble layer. 
  9. Sprinkle the remaining crumble mixture over the berry middle layer. 
  10. Bake for 35-45 minutes, until the crumble is golden brown. 
  11. Serve warm with ice cream or chill in fridge and serve as berry oat bars.
