Ingredients:
For the Crumble Layer:
- 1 cup all-purpose flour
- 1 cup old fashioned oats
- ⅓ cup brown sugar
- 1 tsp ground cinnamon
- ½ tsp sea salt
- 1 tsp vanilla extract
- ½ tsp baking powder
- 1 cup butter (½ cubed, ½ melted)
For the Berry Layer:
Directions:
- Preheat oven to 375 F.
- In a large bowl, add the flour, oats, brown sugar, cinnamon, sea salt, vanilla extract, and baking powder and whisk together.
- Melt ½ cup of butter and cut the other ½ into cubes.
- Mix all of the butter into the crumble mixture until combined and small crumbs form.
- Press half of the mixture into the bottom of an 8x8 baking pan lined with parchment paper or cooking spray and set aside.
- In a pan over medium heat add the frozen berries, lemon juice, cornstarch, and date/maple syrup.
- Lower the heat and keep stirring until the mixture has thickened (~3-5 minutes).
- Once the berry mixture has cooled, pour over the first crumble layer.
- Sprinkle the remaining crumble mixture over the berry middle layer.
- Bake for 35-45 minutes, until the crumble is golden brown.
- Serve warm with ice cream or chill in fridge and serve as berry oat bars.
