1 whole wheat pie crust, store-bought or homemade, softened according to package
1 large egg
1 tablespoon water
Directions:
Preheat oven to 400°F. Line a baking sheet with parchment paper.
In a large bowl, mix together fruit, brown sugar, cornstarch, cinnamon and salt.
If using homemade dough, roll into a 1/8-inch-thick circle and transfer to the prepared baking sheet. Add the fruit filling to the center of the pie crust, leaving a 2-inch border around the edges. Fold the dough over the filling, overlapping the dough as needed.
Whisk together egg and water and brush over the crust.
Bake for 45-55 minutes, or until the crust is golden and the filling is bubbly.
