Recipe by Jen Bates for Wyman's
Ingredients:
Directions:
Preheat the broiler with a rack about 6" below the element. Prepare a baking sheet by lining it with tin foil and then laying a cooling rack on top.
In a wide and shallow bowl, mix a half-cup of the Wyman's Berries, greek yogurt, and neutral oil, smashing the berries as you mix.
Sprinkle the chicken with salt and pepper and then dredge the chicken in the yogurt and berry mixture. Place the dredged chicken on the cooling rack.
Place the chicken/cooling rack/baking sheet under the broiler for 8-10 minutes until the chicken has begun to develop areas of dark brown.
Carefully flip the chicken over and replace under the broiler for another 6-8 minutes, until well-browned and reaches an internal temperature of 155°F.
Allow chicken to rest for 5 minutes, then cut and serve with reserved Wyman's berries.
