In a medium saucepan, combine the blueberries, honey, and water. Simmer on low.

When the sauce starts to thicken, add the cornstarch/water mixture while whisking continuously.

Once the sauce thickens, immediately remove from the heat and allow it to cool.

Add the whipped butter into a chilled metal bowl. Slow fold in 1/3 cup of the cooled blueberry sauce.

Once combined spread the butter into a small, parchment lined, airtight container.

Refrigerate for 30 minutes before using. Blueberry butter is great spread on toast, rolls, muffins, pancakes, or waffles!
