Wild Blueberry Apple Crisp

Yield:  6 servings 

Ingredients:

For the Wild Blueberry Apple Filling:

  • 2 cups frozen Wyman’s Wild Blueberries
  • 4-5 medium apples, peeled, cored and 
  • 2 tablespoons all-purpose flour 
  • 2 tablespoons brown sugar 
  • ½ teaspoon cinnamon 

For the Crisp Topping:

  • ½ cup all-purpose flour 
  • ½ cup old fashioned rolled oats 
  • ½ cup brown sugar 
  • ½ teaspoon cinnamon 
  • ⅛ teaspoon fine sea salt 
  • ¼ cup unsalted butter, melted 

Directions:

  1. Preheat the oven to 350°F. Grease an 8x8-inch baking dish with butter and set aside. 
  2. In a medium bowl, stir together the flour, oats, brown sugar, cinnamon and salt until combined. Pour in the melted butter. Using a fork, stir until small crumbles form. Refrigerate while you prepare the apple filling. 
  3. In a large bowl, toss together the apples, blueberries, flour, brown sugar and cinnamon until the apples are evenly coated. Pour the fruit mixture in the prepared baking dish. Sprinkle the crisp topping over the fruit mixture. Bake for 40-50 minutes, until the topping is golden, apples are tender, and filling is bubbling. 
  4. Let cool for 10 minutes before serving. Serve warm with a scoop of vanilla ice cream (optional).
