Sara Wyman's Blueberry Muffins

A Wyman's of Maine family favorite

Ingredients

1 3⁄4 cup
Flour
1 teaspoon
Baking soda
2 teaspoons
Cream of tartar
1⁄3 cup
sugar
1 teaspoon
Salt
1
Egg, medium
1 cup
Milk
1⁄3 cup
Melted shortening
1 cup
Wyman's Frozen Wild Blueberries (You can also use 1 cup of Wyman's Canned Wild Blueberries)

Instructions

Preheat oven to 400 degrees F (204 degrees C).

Sift flour, soda, cream of tartar, sugar and salt into a mixing bowl. Break one egg into a measuring cup.  Fill the cup with milk. Add egg and milk to the sifted ingredients. Add melted shortening to the sifted ingredients and mix lightly. Fold in wild blueberries.

Spoon into 12 greased muffin pans.  Bake for 20 to 30 minutes (or until lightly browned on top).
