Cherry Dijon Vinaigrette

1 1⁄2 cup
Wyman’s Fresh Frozen Dark Sweet with Red Tart Cherries
Red wine vinegar
extra virgin olive oil
ground black pepper
lemon juice (optional)
In a small saucepan, heat frozen cherries over medium/low heat. Stir occasionally for 10-15 minutes.
In a food processor or blender, combine cherries, red wine vinegar, Dijon mustard, salt and pepper. Slowly pour in the extra virgin olive oil while processing.
Serve immediately or chill in the refrigerator until ready.
